Mix peanut butter, butter, vanilla and confection sugar together. Once mixed, roll into balls and refrigerate. Take the white chocolate and melt it over a double boiler, add oil as needed to thin chocolate for coating. Add in blue food coloring to get the Heritage Crossing blue color. Take peanut butter balls out of the refrigerator, add toothpick and dip balls into chocolate mixture 3/4 way up. Set on lined sheet tray and sprinkle with blue and white sugar crystals. Once dipped and sprinkled, refrigerate again until used. Enjoy!
